Peach and Burrata Salad with Proscuitto
INGREDIENTS
 2 ripe peaches, peeled and pitted
Butter for grilling
2 slices prosciutto
1 small knot of burrata
2 cups rocket
2 Tablespoons olive oil
1 Tablespoons lemon juice
1/2 teaspoon sugar
salt and pepper to taste


SERVES: 2

SERVING SUGGESTION
Serve individually as an entree or on a large plate as part of a sharing menu.

METHOD
Cut peaches into halves and place a small knob of butter on each. Season and place under the grill and cook until golden. Meanwhile mix oil, lemon, sugar and seasoning together and whisk to combine. Toss through rocket and place on a serving plate. Arrange peaches, burrata and prosciutto around the rocket and serve.
